Funfetti Rainbow Cupcakes

Posted on Thursday, July 23, 2015

It's been a while since we've baked, so here's E-main, Jiehui and my latest experiment - Rainbow Funfetti Cupcakes!!! We kept blatantly substituting stuff like the buttermilk, and it should have seriously gone wrong but surprisingly, the cupcakes turned seriously yummy and pretty! Other weird things we had to do: defend our nonpareils (the rainbow stuff) from ants when taking photos, hahaha.

Click here for the Original Recipe,
or follow what we actually used in the end here:

Ingredients

For the cupcakes:

  • 1 1/2 cups plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 stick unsalted butter, softened
  • 1 1/4 cups sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup buttermilk (we combined 1/2 cup of normal milk + 1/2 teaspoon apple cider vinegar and let sit for exactly 5 minutes to replace this)
  • 1/2 cup nonpareils (or rainbow sprinkles)
For the frosting:
  • 1 stick unsalted butter, softened
  • 1 stick salted butter, softened
  • 1/4 teaspoon salt
  • 3 cups powdered sugar
  • 1 tablespoon vanilla extract
  • 1-2 tablespoons heavy cream
  • Additional Sprinkles, for decorating
Instructions
To make the cupcakes:
Preheat oven to 175 degrees Celsius. Line cupcake tin with liners (makes 12 cupcakes).
Whisk flour, baking powder, and salt in a medium bowl.
Add melted butter to a large bowl and mix in sugar with a hand mixer until thick and yellow.
Add eggs one at at time, beating after each addition. Beat in vanilla extract.
Use a mixer to add the flour mixture and buttermilk alternately, starting and ending with the flour.
Stir in sprinkles (careful not to over mix if not the colours will bleed!)
Divide batter amongst the liners till 2/3 full.
Bake for 15-20 minutes until a toothpick comes out clean / your cupcake turns golden.
Cool completely before frosting. We popped ours into the fridge in the interest of time!

To make the frosting:
Beat butter until creamy-white (if you don't beat it enough, your icing will look yellowish!).
Beat in salt and 1 cup of powdered sugar at a time until it’s all added.
Beat in vanilla extract and 1 tablespoon of heavy cream.
Add more cream as needed for desired consistency.
Frost cupcakes by placing frosting in a piping bag (we made an ad-hoc one with those grocery plastic bags for apples and cutting a hole at the corner)
Add sprinkles! If you position your hand higher up, the sprinkles fall more "naturally" onto the cupcake.

Last step: Take tons of pictures.

Enjoy! Till our next baking adventure~

So I have a bit of a love-hate relationship with Carousell. For those of you who don't know, it's an app to sell your preloved... anything. On one hand I am thrilled whenever I find something from online shops selling at much cheaper (i'm honestly not fussy about second hand things, are you?) but on the other hand I've had my fair share of incidences - people sending me stained items, taking a whole month to send the item out to me etc. But still, this dress I got online is one of my favourite pieces and I know I've over-shared it a little, but it's nice isn't it??? :D Sorry it's not like some cool brand hahaha. Oh yes, and it's lined!

Quality has never been the highest priority for me because trends move so quickly and something has to give, but the older I get the more I feel a little picky. Another value shopping discovery I've made is the Mango Online Shop - more specifically, the SALE section because I love the how much higher quality Mango clothes are than most local online shops and the Mango Online sale section always has items my size on their online site (compared to fighting the sales in the physical shop and not finding my size). There's also free shipping for orders above $150.00! Which honestly, is not hard to hit. Don't say never share! ;)

It's been a while I've woken up this early for anything but you know how all photographers rave about the morning light, so I figured it would be fun to test myself - and for dear E-main too! Fun fact, the light only got really good around 7:30-8:00am onwards, but like they say, it's always better to be early than on time, right?

Anyway, a part of me is worried about how my photography style has changed ever since I switched up from my 500D to my 6D. While I truly enjoy the sharpness I get from a bigger sensor now, there's a part of me that hates it if my pictures look to clean cut - too sharp, too professional. To me there is artistry in a bit of grain and fuzziness. In the end, it's easy for any layman to take a nice and sharp photos if they have the money to throw at a fancy camera (or borrow a friend's), but it's how you do the post-processing that makes all the difference between an OK photo and a much more evocative one.
